OUR “WHY”

Revolve True Food & Wine Bar is a reflection of restaurant’s owner Dr. DuBois’ passion for wellness, wonderful food and good wine. All menu items are free of gluten, grains, MSG, preservatives, trans fats, refined or cane sugar, emulsifiers, GMO and soy. Revolve serves only animal proteins that are natural and raised humanely, without the use of antibiotics and added hormones. Diners enjoy wild seafood, organic farm fresh eggs and seasonal organic produce, as well. Guests love the lively, classy wine bar, or, if a quieter experience is preferred, dining in the wine cellar.

Dr. Dusty DuBois, owner of Bothell Chiropractic & Wellness, lost seventy pounds a number of years ago when she changed the way she ate. Since then, she and her team have coached many clients on the path to wellness, encouraging them to collectively lose thousands upon thousands of pounds as they also changed their dietary lifestyles.

OUR FOUNDER

After a career as an associate doctor, Dr. DuBois opened Bothell Chiropractic & Wellness to help women and their families receive quality chiropractic care from one of the few female Chiropractors in the area. She has since expanded her focus to include nutrition and total wellness, and is bringing that passion to Revolve True Food & Wine Bar.

Advice: don't limit your customers based on the day and time. Please be accommodating or we will find somewhere else that is.

I have to lead with a complaint here, unfortunately. Though the place is clean and well designed, the people friendly and helpful, and the menu healthy and interesting, I cannot seem to get what I want when I come in. I don't have the magic time map that tells me when the chef will agree to make the dish I want that somehow cannot be available until 40 minutes from now. I find something I like and the next time I come in, I've somehow managed to visit when they don't feel like making that specific dish/menu.

I'm always happy to see local restaurants and I will wish them well, even if I personally may not return.

I am only looking at the menu here, we just had coffee with our meal on a cold night..

I was hopeful that this would be a great based on the many enthusiastic reviews here.  Re-reading after the meal, there's a lot of reviews that are rooted in the Paleo craze. Fine (really: I'm OK with that.)  But for those who are just looking for a good meal, here's a mixed review.

I'd say 2 out of 3 dishes we had were very good.  The beet carpaccio was a home run.  The Ideal Planked Salmon with Stir Fried veggies was a mixed bag.  The small portion of salmon fillet was well-cooked, neither a raw center nor overcooked/dry, seasoned adequately but with no distinctive flavors.  The veggies were a bit of a mess: some veggies well-cooked and others practically raw -- the only discernible seasoning was straight ginger, not awful but not balanced or particularly interesting.  The scallop dish was good, but also showed one of the limits of the current menu.  The scallops were served with a crust of Moroccan spices, which was great.  The scallops rested on a bed of mashed sweet potatoes, you decide whether that's a good thing or not.  

So here's the thing: they have a relatively limited menu and many many dishes use ingredients like sweet potatoes, cauliflower, or coconut.  Not being a lover of sweet potatoes, I literally eliminated half the menu.  

My best advice would be to look at the menu on their website and figure out whether you're going to find something you'll love.  Many will -- but many won't. I'm always happy to see local restaurants and I will wish them well, even if I personally may not return.
